Ingredients

    1 chicken breast, skinless/boneless
    1 (14 ounce) can chicken broth
    1 can Rotel tomatoes, or diced canned tomatoes, undrained
    1 (4 ounce) can diced green chiles
    1 teaspoon taco seasoning
    generous pinch of red pepper flake, optional
    1 tablespoon dried minced onion
    1 (19.75 ounce) can black beans, drained and rinsed
    1 (11 ounce) can Mexicorn or regular corn
    1/4 cup light sour cream

Directions

Cut chicken into bite sized pieces. To a saucepot add chicken broth, tomatoes, green chiles, taco seasoning, red pepper flake and onion. Heat to boil, add chicken. Stir and boil for 2-3 minutes. Add black beans and corn, reduce heat and simmer 10-15 minutes. Remove from heat and stir in sour cream. Alternately you can leave out the sour cream or add a dollop to each serving.
