Ingredients

    1 lb. ground beef
    8 oz. whole button mushrooms, roughly chopped
    1 c. chopped onion
    3 c. whole wheat penne pasta, cooked
    2 c. low-fat basic pasta sauce
    1 15 oz. can Italian-stewed tomatoes
    2 c. part-skim finely shredded mozzarella cheese
    Seasoning: fennel seeds, crushed oregano, salt (optional), freshly ground black pepper

Directions

Brown the beef and onion, seasoning with fennel seeds, oregano and salt and pepper to taste. Drain. Add chopped mushrooms and cook until mushrooms are done.
Meanwhile, cook pasta al dente according to package's instructions.
Combine beef/mushroom mixture with pasta sauce and stewed tomatoes, then add cooked pasta. Add shredded cheese and mix well.
Pour into a 9 x 13" pan sprayed with cooking spray.
Bake at 350 for 30 minutes.
Optional: top with grated Parmesan cheese.

    This was really good! It's a great recipe to add what you want to it too - black olives, more tomatoes and/or mushrooms, etc. - and it was easy to make. Definitely a keeper! - 2/27/11
