Ingredients

    *Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.) (remove)
    *Peppers, sweet, red, fresh, .5 large (2-1/4 per lb, approx 3-3/4" (remove)
    Asparagus, fresh, 6 spear, medium (5-1/4" to 7" long) (remove)
    Olive Oil, 1 tbsp (remove)
    Rosemary, dried, 1 tbsp (remove)
    Salt, .5 tsp (remove)
    Paprika, .5 tsp (remove)
    Pepper, black, 1 dash (remove)
    Garlic, 1 tsp (remove)

Directions

Clean and cut the potatoes into quarters. Clean and cut the asparagus so the bottoms can be precooked in the microwave with the potatoes.
Precook the potatoes and asparagus bottoms about 5 min. on med. to med. high in the microwave.
While these are cooking, cut the red bell pepper into strips.
Combine the oil, salt and spices in a shallow pan.
When the potatoes and asparagus is precooked, toss all the vegetable together in the oil. Let marinate 15 min. before grilling. You can also bake them in an oven at 350 degrees for 15 min. if you like.
This usually serves 2 to 3 people depending on how many vegetable you like to eat.
For 2 people this would be about 255 calories each.
For 3 people this would be about 170 calories each.
