Ingredients

    * Morningstar Farms "Burger" Crumbles, 2 cup
    * Ground beef, lean, 8 oz
    * La Victoria Enchilada Sauce, 3 cup (one LARGE conatainer)
    *La Tortilla Factory - Low Carb Tortilla, 9 serving
    * Onions, raw, .5 cup, chopped
    * Cheddar or Colby Cheese, Low Fat, 2 cup, shredded
    *1 Taco seasoning packet

Directions

Put the beef in a sauce pan and cook until done. Drain and rinse off the fat. Put the meat back in the pan. Add the chopped onion and crumbles. Cook until done. Add the taco seasoning packet. You're done with the enchilada filling.

Place 2-3 heaping tablespoons of the filling and a tablespoon of cheese into each tortilla and place them in a 9x13 pan. Top with enchilada sauce and then the remaining cheese. Bake at 350 for 30-45 minutes.
