Healthy home made chicken nuggets. Kid friendly. I did not cook this meal with salt and pepper you may want to add some to your cooked meal for added flavor.The cornmeal adds some fiber to this meal. Ingredients

* PERDUE® FIT & EASY® Boneless, Skinless Chicken
Breasts (4..., 1 serving
* Organic Medium Grind Cornmeal - Bob's Red Mill 1/4C
Serving, .5 serving
*Canola Oil, 1 tbsp
* Parmesan Cheese (Bagged Shredded from Stop & Shop) ~ (Se..., .5 serving
* Egg substitute, liquid (Egg Beaters), 2 tbsp
Directions
1) Wash chicken breast and cut into small pieces with kitchen shears or a knife.
2) Measure egg white and pour into bowl. Add chicken turning to coat all sides with egg white.
3) Measure cornmeal and pour onto dinner plate.
4) Measure Parmesan cheese onto dinner plate and mix gently with cornmeal.
5) Put large frying pan on low heat on stove top. Add canola oil. When warm add coated chicken. Turning after three or four minutes to brown all side.
Cooking time will vary depending upon the size of your chicken slices. Generally mine are cooked within fifteen minutes. Cut open a piece or two to check center for being cooked.
