Ingredients

    1 1/2 cup all purpose flour
    1 cup large flake oatmeal
    1/2 cup splenda
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 cup unsweetened vanilla almond milk
    1/2 cup applesauce
    1/2 tsp vanilla
    1 cup mashed banana
    *optional: 1/4 C frozen bluberries mixed with 1 Tbsp flour

Directions

Preheat oven to 400 degrees F.
In a bowl, combine flour, oatmeal, sugar, baking powder, soda, salt.
In another large bowl, mix together milk, applesauce, and vanilla. Add mashed bananas and combine thoroughly.
Stir flour mixture into banana mixture until just combined.
Place in muffin tins (greased or lined with paper bake cups).
Bake at 400 degrees F for 20 mins. or until lightly browned and toothpick comes out clean.

    I was eager to make this recipe but I was very disappointed. I made sure that I measured everything so I don't think I made a mistake but these came out gummy. Not good at all. I'd like to know how they turned for other people, did you have to revise anything? I was very very disappointed. - 6/29/12

    Incredible!
    I have been looking for a good moist vegan muffin recipe, and this is it! I made these last night and had to slightly change a few item (because that's what I had on hand!) I used vanilla soy milk instead of almond milk, sugar instead of splenda, and maple extract instead of vanilla. Wonderful!
