    1/4 cup tequila
    1-1/2 Tablespoons canola oil
    2 Tablespoons fresh lime juice
    1 clove garlic, minced
    1-1/2 tsp each: dried oregano, ground cumin
    1 tsp each: onion salt, seasoned salt
    1/2 tsp each: chili powder, paprika, crushed red pepper flakes, fresh ground black pepper

    1 lb chicken breasts, skinless boneless (or flank steak), sliced thinly (1/2 inch)
    1/2 cup fresh cilantro leaves
    1/2 cup red onion, sliced into thin wedges
    1/2 cup each green, yellow and red bell pepper

    1-1/2 Tablespoons canola oil
    8 (8") low carb tortillas, warmed
    salsa, optional
    fat free sour cream, optional


Prep time is actually 20 minutes, then 3 hours marinating in refrigerator.

Combine marinade (tequila through ground black pepper) in large plastic bag or "marinating container" (mine is Tupperware). Mix with chicken, cilantro, onion, bell peppers. Marinate several hours.

In a 10" skillet (cast iron preferred), heat oil and cook fajitas meat mixture in batches, stirring and mixing quickly until meat is done, 4-5 minutes. To serve, spoon some meat mixture into tortilla, add salsa and sour cream if desired.
