Ingredients

    1lb. 93% lean ground beef
    1/2 of a white onion, diced
    1 large can diced tomatoes (16oz)
    1-8oz can tomato sauce
    1-4oz can diced green chiles
    1c. frozen corn
    1-8oz box Jiffy Corn Bread Mix
    1/3c skim milk
    1 egg
    1 taco seasoning packet

Directions

Brown ground beef and sautee onions in a large skillet. Drain meat, return to skillet, and add tomatoes, tomato sauce, green chiles, corn, and seasoning packet.

Note: 1 packet of seasoning is a bit heavy so add half and then see where it's at...season to taste

Prepare corn meal batter by mixing dry mix with milk and egg. Drop spoonfuls of batter on the meat mixture evenly. Cover and simmer on med-low heat for 12-15 minutes or until batter cooks thoroughly.

    Very Good
    I used the whole packet of taco mix (low sodium). My husband and I both thought it was great. I have made something similar before. I didn't tell him it was a "diet" recipe. Will definitely make again - 3/27/10
