Ingredients

* 1 boneless skinless chicken breast (about 1/2 pound), cut into chunks
* 1 cup cubed fully cooked ham
* 1/4 cup chopped onion
* 1 sweet red pepper, sliced
* 1 tablespoon olive oil
* 1/2 cup uncooked rice (I used texmati)
* 1 teaspoon ground turmeric
* 1 teaspoon ground cumin
* 2 garlic cloves chopped or pressed
* 1/4 teaspoon salt
* 1 1/2 cup chicken broth
* 3/4 cup frozen peas, thawed
Directions
* In a large skillet, saute the chicken, ham, onion and red pepper in oil until chicken is browned on all sides. Remove with a slotted spoon.
* In the same skillet, saute rice in remaining oil until lightly browned. Stir in the turmeric, cumin, garlic and salt. Return meat and vegetables to pan; toss lightly. Add broth; bring to a boil. Reduce heat to medium; cover and simmer for 30-35 minutes or until rice is tender. Stir in peas. Yield: 3ish servings.
