Introduction

Ingredients

    3 large over ripe bananas
    1 1/2 c All-Bran Buds
    1 stick butter, softened
    2 large eggs, slightly beaten
    1/2 c sugar
    1/4 c honey
    1/2 c chopped walnuts
    1/2 c unbleached AP flour
    1 tsp baking soda
    1/2 tsp salt
    1 1/2 c whole wheat flour
    1/4 c hot water

Directions

Grease 9x5x3 loaf pan. Mash bananas and mix in bran cereal until very well blended. Set aside for at least 5 min. In large bowl cream butter and sugar. Fold in eggs. Fold in honey. Fold in banana mixture. Into this bowl sift together AP flour, baking soda, and salt. Gently fold then add whole wheat flour gradually, folding gently and gradually adding up to 1/4 c hot water as needed to keep mixture moist. Once blended thoroughly, fold in nuts until evenly distributed. Spoon batter into pan and gently smooth surface so it is even. Bake in center of oven 55 minutes or until toothpick inserted into center comes out clean.
Allow to rest in pan 5-10 min then transfer to cooling rack.
Serve with butter, honey, or syrup if desired.
