Introduction

My grandmother's sister's recipe.

Substitutions- used lean ground turkey breast, used low sodium chicken stock instead of making my own stock, used canned diced tomatoes instead of tomato paste.

Ingredients

    Great Value Chicken Broth, 8 serving
    97% lean turkey breast (ground), 16 oz
    Parmesan Cheese, grated, .25 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Celery, raw, 1 cup, diced
    Carrots, raw, .5 cup, chopped
    *del monte no salt added tomatoes, 1.5 cup
    *Extra Virgin Olive Oil, 1 tbsp
    *Acini Di Pepe (pasta), 0.33 cup
    Parsley, .5 cup
    *Progresso Italian Bread Crumbs (1/4c), 1 serving
    Egg, fresh, 1 large
    Spinach-1 cup chopped

Directions

Meatballs:
Mix: ground turkey, salt, pepper, basil, 1/2 amt parsley, 1 egg, parmesan cheese, and bread crumbs.
Make into thumb sized balls-bake in oven 15 min @ 350 on PAM cookie sheet & set aside when done

On stove:
Sautee onion, celery, diced carrot in 1T of olive oil
Add can of tomatoes and pinch of sugar
Add stock and meatballs-Simmer for 20 min
Add 1/3 cup pasta (you choice)
Add chopped spinach and parsley just before servings

Serve with bread or crackers and top with sprinkle of cheese

Makes approx 8 1 cup servings
