Ingredients

- 6 oz package LightLife Chick'n Strips (Smart Strips)
- 15 oz can Mixed Stir-fry Vegetables
- 15 oz can Whole Peeled Straw Mushrooms
- 5 oz can Diced Water Chestnuts
- 1 TBSP olive oil
- 1 tsp red pepper flakes (or to taste)
- 2.5 TBSP House of Tsang Szechuan Spicy Stir Fry Sauce
- Bibb or other lettuce for wraps
Directions
Warm 1 tbsp olive oil* in a skillet on medium heat.
Add chick'n strips and "fry" for a couple minutes on medium high heat. Drain and then add the mixed stir fry vegetables, straw mushrooms, water chestnuts, red pepper and stir fry sauce and continue cooking on medium high heat until thoroughly heated and most of the liquid has dissipated. Let cool for a couple of minutes and then mince the entire mixture in a food processor. Split the mixture in two and spoon some mixture into lettuce leaves (used as wraps).
I usually mix some soy sauce, ketchup, rice vinegar, a packet of splenda and some water together to use as a dip/sauce.
* If you want to reduce the fat and calories, simply use cooking spray instead of olive oil.
