Introduction
I tried several lite banana bread recipes, and always found them to be either to dence or to dry, so I took a recipe that sounded like kind of what I wanted and changed a few things. My husband and I both loveed it. Ingredients

1 cup whole wheat flour
1 cup organic unbleached white flour
1 tsp baking soda
1/2 cup granulated sugar
1/2 cup splenda for cooking and baking
3 small ripe bananas (mashed)
1/2 cup unsweetened applesauce
5 oz. egg substitute (like egg beaters)
1/3 cup walnuts (chopped)
Directions
Preheat oven to 350*
Prepare a loaf pan by greasing the bottom only (I used pam for baking)
Serving size is 1 slice. This recipe makes 16 servings.
In a large mixing bowl, blend the flours and the baking powder together.
In a seperate bowl mix the sugars, egg substitute, applesauce and mashed banana.
Pour the wet ingredients into the dry ingredients and add the walnuts. Mix just until everything is combined and pour into loaf pan.
Bake for 45-50 minutes or until a toothpick stuck into the middle comes out clean. Cool on a wire rack for 5 minutes and turn out on the rack to finish cooling.
Note: If you find the loaf sticks a little just run a knife around the edges.
