Introduction

Ingredients

    1/2 cup chopped onion
    2 medium/large potatoes, shredded (unpeeled is fine)
    2 cups 2% sharp cheddar shredded cheese
    11 eggs, beaten smooth

Directions

Preheat oven to 400 degrees

Mix all ingredients in nonmetal bowl. Pour into large glass casserole dish - should not be more than about 1 1/2 inch thick.

Cover with foil. Bake 30-45 minutes, until bubbly. Remove foil and bake an additional 15 minutes. Check to see that potatoes are cooked through and is browned on top.
