Introduction

My husband doesn't like banana bread, so he came up with these yummy cookies to use up some ripe bananas.

Two cookies = about 110 calories. And much tastier than a commercial 100 calorie cookie!

Ingredients

    2 C. Rolled Oats
    3 Ripe bananas, mashed
    1/2 C. raisins
    1/4 C. semi-sweet chocolate chips
    1/4 C. Pecans, chopped
    1/4 C. Splenda
    1/3 C. Unsweetened apple sauce
    1 1/2 T. Mexican Vanilla
    Pinch Cinnamon

Directions

Heat oven to 350. Line baking sheet with parchment paper. No need to grease pan if you don't use parchment.

Mash bananas in a medium bowl. Add remaining ingredients. Mix until moist. Let stand for 15 minutes. Drop cookies onto baking sheet by level tablespoonfuls.

Bake 15-20 minutes until golden brown.

Makes 34 cookies.

    Very Good
    These were good and sweet enough to satisfy. I overcooked them a tad, so I think the trick is to keep them plump, do not flatten them. The ones that were "plumper" had a nice chewy center. I will make these again but with a minor adjustment. Thanks for the recipe. - 10/23/12
