Introduction

Number of Servings: 6

Ingredients

    1 lb of Chicken breast or tenderloin, no skin.
    2 cans of black beans
    1 cup of brown rice
    2 cups water
    1 can of sweet corn
    1 jar (16 oz) Salsa, I recommend Newman's Own Medium salsa.

Directions

Put rice and water in slow cooker. Add chicken, then salsa, black beans, and corn. Slow cook on high for an hour, and then cook on low for at least 3 hours. Or cook on low heat for a longer period of time. When done, pull apart the chicken breasts with a fork.

Consider adding a little cumin during the cooking process.

Optional serving suggestion: a dollop of sour cream or a 1/4c of cheddar cheese.

Makes 6-8 servings.

    I will make this but I don't eat onions so I will substitute a can of diced tomatoes w/chiles for the salsa. I love stuff like this! - 4/3/10
