Ingredients

4 tbsp. melted butter
1 1/2 cups Panko crumbs
1 tbsp. Old Bay seasoning
1 tbsp. onion powder
1 tbsp. garlic powder
zest of one lemon
2 tbsp. fresh chopped thyme
1 tbsp. fresh chopped chives
flour
salt
pepper
2 eggs, beaten
4 cod filets, 6 oz each
Directions
1. Preheat oven to 425 degrees F.
2. Pour melted butter over Panko crumbs and work into the crumbs to evenly distribute. Season the crumbs with Old Bay, onion and garlic powder, lemon zest, thyme and chives.
3. Dredge the fish through seasoned flour, and coat in egg, then roll in crumbs.
4. Arrange on a slotted broiler pan or cooling rack arranged over a baking sheet. Bake 20 minutes or until deeply golden and crispy.
4. Makes four sandwiches.
