Introduction

Very easy skillet dish that is quite versatile. The original says to add 2 T butter which I replaced with Olive Oil and it said 1/2 C Roasted Red Pepper which I omited :) Very easy skillet dish that is quite versatile. The original says to add 2 T butter which I replaced with Olive Oil and it said 1/2 C Roasted Red Pepper which I omited :)

Ingredients

    1 lb. of skinless chicken breasts
    Enough black pepper to coat chicken breasts
    2T Olive Oil
    1-2T Flour
    2 C Fresh Mushrooms
    1/2 C Onions(Green Onions work well too)
    1 C Chicken Broth
    1/2 C Sour Cream
    2T Parsley

Directions

Put the Olive oil into a skillet and then coat the chicken breasts with the flour and sprinkle with pepper. Cook for 10 minutes or until it is well browned on both sides. Add the mushrooms and onions and cook till tender
Stir in the broth and heat to a boil. Cover and cook for about 5 minutes until the chicken is done.
Add the sour cream(and red peppers if you choose) and cook until hot. Sprinkle with parsley.
Enjoy!
