Introduction

Ingredients

    1 1/3 cups all purpose flour
    3/4 tsp salt
    1/2 tsp baking soda
    1/4 tsp baking powder
    5 1/3 TBS I Can't Believe It's Not Butter Light
    2/3 cup Xylitol
    2 large eggs
    1 cup mashed very ripe bananas (about 2)


Directions

preheat oven to 350 degrees

grease a 8 1/2 X 4 1/2 inch (6 cup) loaf pan

Whisk together thoroughly:
Flour
Salt
Baking Soda
Baking Powder

In a large bowl, beat on high speed until lightened in color and texture (2 to 3 minutes):
ICBINB Light
Xylitol

Beat in the flour mixture until the ICBINB Light and the flour are blended and the consistency of brown sugar.

Gradually beat in (I do this by hand, because it is thick and mucks up my electric mixer):
Eggs - lightly beaten beforehand

Fold in with spatula until combined:
Mashed Bananas

Bake at 350 degrees until a toothpick inserted in the center comes out clean, 50 - 60 minutes. Cool in pan on a rack for 5 to 10 minutes before popping it out of the pan to cool completely.

Cut the loaf into 12 slices to have a reasonable calorie per serving (128 cal )
