This was pretty good and very simple. This was pretty good and very simple.
Number of Servings: 4


    1 can (28 oz) diced tomatoes, undrained
    1 onion, diced
    2 pk oxo chicken broth, low sodium
    14 oz water
    1 tsp sugar
    2 tsp dried basil
    3/4 tsp soy sauce, low sodium
    1 cup canned black beans, rinsed and drained
    3 oz fresh baby spinach or chopped spinach leaves


Mix oxo packages with 14 oz water (warm water works best). Combine tomatoes, onion, oxo broth, sugar, basil and soy sauce in a large pot. Bring to a boil over high heat. Reduce heat and simmer, uncovered, for 10 minutes.
Stir in drained beans and spinach and cook 5 minutes longer or until spinach is tender.
Remove from heat. Serve.
Serves 4 (1 1/2 cup servings)
