Ingredients

3 lbs boneless skinless chicken breast ground
Juice from 6 medium limes
4 tsp Fish Sauce
Sea Salt to taste
2 Tbs sugar
1 medium onion finely chopped
6 cloves of garlic minced
1 Tbs olive oil
4 Tbs fresh chopped mint
Directions
Heat oil in large cast iron skillet. Saute garlic until fragrant. Add chicken and saute for a few minutes. Add lime juice, fish sauce, sugar and onion. Saute until chicken is thoroughly cooked. Add freshly chopped mint. Salt to taste.
Delicious with rice noodles and rice paper wraps.
