    1 box lemon cake mix
    2 medium eggs
    2 cups peeled, grated zucchini
    1 8 oz carton Fat Free Cool Whip
    1 box sugar free lemon gelatin


Mix cake mix, eggs and zucchini in mixing bowl. Spray 9x13 in cake pan with cooking spray. Spread mixture in pan and bake in preheated oven at 350 degrees for 25 minutes.
Let cool. Mix gelatin in thawed cool whip and spread on cooled cake. Keep refrigerated. Cut into 24 pieces and serve with strawberries and blueberries if desired.

    This was Awsome!!! My family loved it and so did my co-worker. They were all suprise when I told them what was it in. My husband had not clue why I was shedding the zucchini for. Will make again and again - 1/28/11

    Very Good
    Great recipe--I had to add some water to make it have that cake batter consistency b/c it was too thick to pour. But it turned out to be absolutely delicious! I added some lemon zest/juice to the icing. YUM! - 6/25/10
