Great quiche that replaces the typical crust with crispy hashbrowns. Add or replace ingredients to personal preference, and the possibilities are endless. Ingredients

Frozen Hashbrowns - 1.5 cups (press between paper towels to remove moisture)
Onion - 1/2 of small onion, diced
Green Bell Pepper - 1/3 of medium pepper, diced
2% milk - 1/2 cup (can use half and half or cream as well - used milk to keep reduce calories)
Ham - 2/3 cup diced
Colby Cheese - 2/3 cup shredded
Melted Butter/Margarine - 1/3 cup (used lower-cal option here as well, will probably use less next time)
Directions
Preheat oven to 425
Combine hashbrowns and butter, mix well. Use mixture to line 10 in pie pan. Bake until crispy at 425, typically about 30-45 minutes
Combine dry ingredients in small bowl and set aside - Ham, Onion, Bell Pepper, Cheese (can throw in others to taste)
Combine eggs and milk in separate bowl
Remove cooked "crust" (hashbrowns) from oven and cover evenly with dry ingredients
Pour egg mixture over top and bake at 425 for another 30 minutes or until set
