Ingredients

4 boneless skinless chicken breasts cut into bite size pieces
1 14.5 oz. package of Ronzoni Smart Taste Pasta
1 14 oz. can 99% fat free chicken broth
1 cup chopped scallions (green onions)
2 cloves garlic (or more to taste)
2 cups fresh spinach
1 TBS Olive Oil
1/4 cup lemon juice (or more to taste)
1/2 cup water
1 1/2 TBS Cornstarch
1 TBS Italian seasoning
salt and pepper to taste
Directions
Cook pasta according to package directions. In the meantime....
1. Heat oil in a large saute pan over medium high heat. Add chicken, onions and garlic. Stir occasionally until chicken is completely cooked. Remove chicken from pan.
2. Poor chicken broth, lemon juice, Italian seasoning, salt and pepper into same pan and bring to a simmer.
3. Mix cornstarch with 1/2 cup cold water and slowly mix into broth using a wire whisk. Continue stirring with whisk until broth starts to thicken.
4. Add cooked chicken and fresh spinach to the broth mixture and stir until spinach is wilted. Remove from heat.
5. Drain pasta and add to chicken mixture.
6. Sprinkle parmesan cheese over the top and serve.
Makes 6 hearty servings.
