Number of Servings: 6

Ingredients

    Zucchini (3 med - 2 cup sliced)
    1 Can of Diced tomotoes
    11 oz cooked lean ground beef (1 lb raw)
    2 medium onions diced
    1 tbsp olive oil
    Pizza Seasoning
    Garlic powder (or 2 cloves pressed garlic)
    3 Tbsp Grated Parmesan cheese

Directions

Brown the beef (salt and pepper)
Saute' the zucchini and onion in olive oil while the beef is draining
Mix in the tomato and drained ground beef after the zucchini is tender.
Season with pizza seasoning and garlic powder (or use clove garlic for sauteing) and simmer for 5 minutes so the flavors marry
Sprinkle with parmesan cheese
(made 6 cups)

    Great Recipe! First time we ate as listed, second time I added egg noodles. I only ate a few but hubby has a 29" waist..he can eat all the pasta he wants!!! - 7/27/07

    Very Good
    Very good, I added 4 oz Barilla Plus spaghetti and my husband really liked it also. Good way to use the extra zucchini. Will make it again - 7/14/07
