Taken straight from the Panera Recipe book Taken straight from the Panera Recipe book
Number of Servings: 24

Ingredients

    2 cloves garlic
    1 Shallot
    1 tsp of dried oregano and basil each
    1 tbsp Dijon mustard
    1/2 C red wine vinegar
    1 1/2 C olive oil
    salt and pepper to taste

Directions

Put everything except the oil and the salt and pepper in a food processor and blend until well blended together. With the processor still running, slowly add the oil continuously to emulsify. Add salt and pepper to taste.
