Ingredients

1/2 cup cooked sweet potato, cubed
2 tbsp salsa
1 ounce part-skim mozzarella
1 slice whole wheat bread, cut into cubes
1 egg
Directions
Preheat oven to 425 degrees F. Lightly spray a ramekin with non-stick cooking spray.
Add the bread and sweet potatoes to the ramekin and top with salsa. Tap the ramekin on a surface a few times to let the salsa work its way down.
Cover with foil and bake for 7 minutes. Remove foil and crack the egg over top of the bread and potato mixture. Bake uncovered for 5 minutes. Top with cheese and bake until cheese is melted and browned (about 3 minutes in my oven).
Serve immediately.
