I saw the basis for this in a cooking magazine, coming in at 560 calories! This is my version, topping out at 320. Ingredients

Sandwich
1 Thomas' Bagel Thin
1 slice Canadian Style bacon
1 large egg
1/4 avocado, (Haas), sliced
Cooking Spray, 1 second spray
Spread
.5 tsp shallots, chopped
1 tsp lemon juice
.25 tsp lemon peel
1/2 Tbsp light mayonnaise
Directions
If you want these hot and crispy, timing is critical.
1. Mix all spread ingredients together in a small bowl and set aside
2. Spray small skillet with cooking spray, place over medium heat. Drop bagel thin into toaster. Add Canadian bacon and egg to pan, cook about 1 minute. Turn bacon, cover and cook 1.5 to 2 more minutes. Whites should be firm and yolks still creamy.
3. Put spread and avocado on bagel thin bottom. When egg is done, put bacon on avocado and egg on top of bacon. Spread bagel thin top with spread, put on top of sandwich and enjoy!
Makes one healthy meal - whichever one you want it to be!
