Introduction

This is a variation of the Vegetarian Chili that I found on Spark. This recipe uses vegetables that I always have on hand and cannelloni beans that I find much tastier and less revolting than black or kidney beans. Ingredients

    1 medium onion, chopped
    4 cloves garlic, chopped to your preference
    1 tablespoon of canola oil
    5 baby carrots
    1.5 chopped ripe tomatoes
    1 15.5 oz can of Cannelloni Beans
    4 tbsp of chili powder (or to taste)

Directions

Chop onions and garlic. Sautee in medium size frying pan. Chop carrots and celery. Add to pan until tender. Add chopped tomatoes, beans and chili powder. Heat and serve.

Serves 4.
