Ingredients

    4 slices of fresh pineapple
    1/4 cup finely chopped red onion
    1/4 cup minced red bell pepper
    1/4 cup red wine vinegar
    2 tbs. lime juice
    1 serrano pepper
    1tbs finely chopped fresh cilantro leaves
    1.5 tsp. minced garlic
    2 6oz tuna steaks
    1 tsp olive oil, for brushing tuna steaks for grill

Directions

Brush the pineapple slices lightly with 1/2 tsp. of olive oil and place on the grill and cook. Turning occasionally, until soft and marked by the grill. About 3 minutes. Remove and allow to cool at room temperature. Dice the pineapple slices, get rid of the core portion. Put in a nonreactive bowl. Add the red onion, bell pepper, vinegar, minced serrano pepper, lime juice, cilantro and garlic.Let sit until ready to top on the tuna steaks.
Drizzle tuna steaks with 1tsp. total of the olive oil and on medium heat. Set the grill. Place steaks on the grill when hot, turning 45 degrees after 2 mins. Repeat on the other side for additional 2 minutes. or until the tuna is medium rare. Remove from the heat and set aside. Serve with the grilled pineapple salsa.

I like to serve this with a jasmine or basimatti rice, and a simple veggie. Maybe garlic saute fresh spinach. Enjoy.
