Ingredients

    Amaranth Grain, 1/4 cup
    Aduki beans (Eden Organic brand, no salt added, fat free), 1 can
    College Inn Chicken Broth - 99% Fat Free, 4 cup
    Green Chili Peppers, canned, 1 cup
    Onions, raw, 1 cup, chopped
    Grapeseed Oil, 2 tbsp
    Lentils, 2 cup
    Flax Seed, 3 tbsp
    Tahini, 3 tbsp
    Cumin, ground, .5 tsp
    Chili powder, .25 tsp
    Celery salt, .125 tsp

Directions

Rinse and then soak lentils in water.

Heat oil in a large stock pan. Saute onions until soft. Add can of green chilis and spices, while continuing to saute the onions.

Add chicken broth and beans. Bring to a boil. Add lentils, amaranth, flax seed, and tahini sauce. Simmer until the lentils and amaranth are soft.
