Introduction

Quick, fun and goes with almost everything pasta and some things not. Punched up with a little extra heat to account for our local tastes. :) Quick, fun and goes with almost everything pasta and some things not. Punched up with a little extra heat to account for our local tastes. :)

Ingredients

    1lb. tahina, raw
    2C water
    1/2C rice vinegar
    1/4C brown sugar
    1.5T Sesame Seeds
    1.5T Crushed Red Pepper Flakes
    1.5T Chili pepper
    3 Scallions
    2T fresh Cilantro
    1.5t Morton Lite Salt

Directions

1. Take all ingredients except the scallions and cilantro and toss into food processor.
2. Turn on.
3. Hum to the scream of the machine.
4. Keep adding water until it's a thin sauce (2C water worked for me...)

When you're about to serve, add the scallions and cilantro, finely chopped, to the sauce.

Makes 10-1/2C servings. One serving covers about a cup of hot pasta. If you want it cold, mix well while pasta is hot, then cool in fridge.
