Introduction

A lowfat granola with lots of flavor from real maple syrup. No pancake syrup allowed. A lowfat granola with lots of flavor from real maple syrup. No pancake syrup allowed.

Ingredients

    1/2 cup maple syrup
    1/2 cup brown sugar
    2 large egg whites
    1/2 tsp salt
    2 tsp vanilla extract
    dash of cinnamon
    3 tbsp flax meal
    3 cups oats
    1 cup chopped pecans

Directions

Makes approximately 14 servings, 1/2 cup each
Oven temp 325 degrees F

Put syrup and sugar over low heat in small sauce pan until sugar dissolves, but do not boil. Transfer to a large bowl to cool a few minutes. Toast pecans about 5 min in oven while syrup cools. Whisk egg whites into syrup followed by seasonings, flax, oats and nuts. Spread on buttered baking sheet and bake for 25 minuts. Stir/flip over and bake for 5-10 more minutes. Cool in pan and enjoy over greek yogurt with a side of fruit.

    This sounds really good. I can't figure out how it could have 14 servings of 1/2 cup each. There are only 4 cups + of dry ingredients -- ?? Calories must me much higher per serving than what's shown. - 7/27/10
