Introduction

I found this recipe in a tailgating recipe book and scaled it down to be healthier and lower calorie. ****NOTE: the calorie count includes a 100 calorie pita, but the recipe calls for 1/2 pita with 3/4 cup filling, so if you cut the pita in half, and still use the 3/4 cup filling, you can reduce the calorie count by 50 calories. Ingredients

    1 package (10 oz) frozen broccolli florets (i buy it already the already chopped kind), cooked and drained.
    2 cups shredded, cooked, skinless, boneless chicken breast
    1 medium tomato, chopped
    1/4 cup(4 TBSP) Kraft miracle whip light salad dressing
    1/2 TBSP. kraft fat free Ranch salad dressing
    3 tsp. regular or honey mustard
    salt, pepper to taste
    1 cup low fat shredded cheddar cheese
    OPTIONAL: 2 slices of turkey bacon, cooked and crumbled. (included in calorie count)
    100 calorie pita (entire pita is counted in calorie count--cut in half to reduce calories)

Directions

serves 4: 1/2 pita with 3/4 cup filling.

in large bowl combine, broccoli, chicken, cheese,tomato and bacon (optional) in a small bowl. combine mayo, salad dressing, mustard and salt and pepper. pour over the broccoli mixture and toss to coat. spoon 3/4 cup into each pita half.
