Ingredients

    Egg, large, 2
    Stevia powder, 1 1/2 tsp*
    Milk, 1%, 3/4 cup
    fresh Lemon Juice, 1/4 cup
    Lemon Rind, grated, 1-2 tsp
    All-purpose flour, 3/4 cup
    Whole wheat flour, 1/2 cup
    Baking Soda, 1 tsp.
    Nutmeg, 1/2 tsp
    Ground ginger, 1/2 tsp
    Pomegranate Seeds, 3/4-1 cup**

    *Can be substituted with 1/2 cup of sugar.
    **Can be substituted with blueberries.

Directions

Makes 12 muffins.

Preheat oven to 350 degrees F. Beat eggs, stevia, milk, lemon juice and rind together.

Mix together flour, baking soda, nutmeg, ginger in separate bowl. Fold liquid mixture into dry. Fold pomegranate seeds in batter Pour into greased tin. Bake until lightly browned, about 20-25 minutes.
