Ingredients

    2 hearts of Romaine lettuce
    1 1/2 lbs lean ground turkey (mine was 93% lean)
    Two bell peppers (any color) diced
    4 large carrots diced
    2 cups sliced mushrooms, I used white (can be rehydrated dried mushrooms)
    1 large sweet onion diced
    2 finely diced cloves of garlic
    1 can drained black beans
    Juice and zest from 1 lime
    3 tablespoons oyster sauce
    3 tablespoons low sodium soy sauce
    salt (optional) and pepper to taste

Directions

Rinse lettuce well with cold water. Chop bottom inch off of lettuce and soak in cold water for ~5 min to crisp up. Dice vegetables. In a large pan (non-stick works best) cook onions, carrots and garlic together with salt and pepper on med/high heat covered until onions are mostly translucent. Stir occasionally. Add ground turkey, mushrooms and bell peppers stirring so that turkey begins to get evenly browned. Add rest of ingredients and cook thoroughly on med/high heat. Fill leaves with about 3-5 tablespoons of turkey/veggie mix. Top with a little Sriracha for a kick. Makes 10 servings.
