Ingredients

    1/2 cup quick cooking oats

    1/2 cup all purpose flour

    1/2 cup whole wheat flour

    1 tbsp baking powder

    1/2 tsp baking soda

    1/4 tsp salt

    1 tsp cinnamon

    1/2 tsp nutmeg

    1/2 tsp allspice

    1 cup mashed ripe bananas

    1/4 cup Splenda sugar blend

1/4 cup Daisy light sour cream

    1 egg

    1/2 tsp vanilla extract

Directions

Mix all dry ingredients together, set aside.

Cream together bananas, splenda, sour cream, egg, and vanilla. Mix well.

Add dry ingredients to wet, mix just until blended,it may be a bit lumpy because of the bananas. Grease a regular muffin pan, fill muffin cup 3/4 full. Bake at 400 degrees F for 20-25 minutes.

Makes about 15-16 muffins depending on how much batter you put in each muffin cup.

Also you can bake in mini muffin pan, cook only 8 min. each pan . This will give you roughly 48 mini muffins.
