Introduction

Ingredients

    1 tablespoon vegetable oil
    1 bag baby or sliced carrots
    7-8 stalks celery
    1 large onion
    12 cups hot water
    1/4 cup Better than Boullion chicken base
    1 small or 1/2 large rotisserie chicken
    6 oz uncooked Barilla multigrain pasta

Directions

Heat oil in dutch oven on medium heat. Meanwhile, cut up carrots, onion, and celery in bite sized pieces. Sautee vegetables until soft, about 10 minutes. Mix hot water with chicken base, and add to pot. Bring to a boil, then turn down to simmer. Meanwhile, remove meat and hand shred into bite sized pieces, avoiding fat and skin, adding to pot. After soup boils, add pasta. If you use spaghetti or angel hair break up into smaller pieces. Cook another 10-15 minutes after pasta is added. Can be simmered long if desired.
