Ingredients

    6 pork chops
    2 cups white rice
    2 medium carrots, sliced
    1 16 oz. bag frozen chopped cauliflower
    1 Red sweet pepper, sliced
    2 cups chicken broth
    1tsp Tony Chacere's cajun seasoning or to taste

    Spices to taste

Directions

Preheat oven to 375*. In a baking dish layer rice, then carrots, red peppers, then cauliflower. Add chicken broth. Add a little more if rice is not completed covered. Then, add pork chops on top and seasoning with cajun seasoning, s+p on both sides. Cover with foil and bake for 60 mins.

Makes 6 servings.

*Note: Even my kids really liked this one!
