Introduction

Ingredients

1 can chickpeas, drained & rinsed
1/4 c mayonaise
1 tbsp whole grain mustard
2 tsp celery seeds
1/4 c chopped celery (one rib)
2 Tbsp scallions-sliced (2 scallions)
a few turns of the peppermill
a pinch of cayenne pepper (optional)
1.5 Tbsp umebochi vinegar (optional)
Directions
Place chickpeas in food processor & pulse a few times to roughly chop.
Add the remaining ingredients & pulse a few more times to mix.
Unplugged Alternative: Place chickpeas in a bowl & mash slightly with a fork. Add remaining ingredients until combined. Chop the veggies a little finer for this version.
Vegan: Use vegan mayo or a vinaigrette in place of mayo.
