Ingredients

    3 eggs
    1 1/2 cup sugar
    1 cup applesauce (Unsweetened)
    1 1/2 pumpkin (Organic)
    2 1/4 Organic all purpose flour
    1 1/2 teaspoon baking soda
    1 1/2 baking powder
    1 1/2 salt
    1/1/2 cinnamon
    1/1/2 teaspoon vanilla

Directions

Preheat oven to 350*

1. Combine eggs, sugar and applesauce. Stir well. Add pumpkin. Add vanilla. Stir all moist ingredients well.

2. Combine in a seperate bowl flour, baking soda, baking powder, salt, and cinnamon. Sift dry ingredients together and add to mixture.

3. Pour into either sprayed glass baking dish or muffin cups. Bake for 1 hour. Check to see if done with a tooth pick.

Cool on wire rack.
