Sweet, but healthy enough for breakfast. This dish puts more focus on the apples, the muffin batter is there to help hold them together! Ingredients

4 small to medium sized apples, cored and sliced
1 tsp cinnamon (or to taste)
1 tsp sugar (from the 1/2 C below)
1 C instant oats
1 C whole wheat pastry flour
2 tsp baking powder
1 tsp baking soda
dash salt
1/2 C yogurt
2 T reduced fat sour cream
1 C unsweetened soy milk
1/2 C sugar
Directions
Core and slice the apples about 1/4" thick. Toss with cinnamon and sugar and layer in a lightly greased baking pan.
Combine dry ingredients and mix well. Combine wet ingredients in a separate bowl and mix well. Combine wet and dry ingredients and mix briefly. The batter should be thinner than normal muffin batter, somewhere between muffin and pancake batter thickness.
Pour over the apples and bake at 375 degrees for about 50 minutes, or until the bread is browned and a knife inserted in the center comes out clean.
Makes 6 servings.
