Introduction

Ingredients

4 potatoes, peeled and sliced
4 oz Neufchatel Cheese (or lowfat cream cheese)
1/4 of a large onion
1/2 cup Nonfat Plain Yogurt
1 Chicken Breast
1/2 cup cheddar cheese
1/4 cup water
1 tsp Black Pepper
Cooking Spray
Directions
Preheat oven to 450 degrees
Peel and slice potatoes. Cut chicken breast into strips. Spray a small casserole dish with cooking spray. Spread out potatoes and chicken in dish. Pour water over top.
In a blender or food processor, add onion, neufchatel cheese, nonfat plain yogurt, and black pepper. Mix on low setting until blended into a creamy mixture. Pour mixture onto potatoes and chicken and spread around with a rubber spatula until everything is evenly coated. Sprinkle cheddar cheese on top of everything. Bake for 50 minutes or until potatoes are cooked through.
Make 4 1/2 cup servings.
Neufchatel Cheese mixture makes a great veggie or potato chip dip!
