Introduction

I am not fond of fish, but these are pretty good. I am not fond of fish, but these are pretty good.
Number of Servings: 4

Ingredients

    1 can salmon
    1 med egg
    1 tbsp light miracle whip
    1/8 c. crushed saltines
    1/8 c. chopped celery
    1/8 c. chopped onion
    1/8 c. canola oil for frying

Directions

I remove the skin and spine from a large can of salmon (even though my mother says that it is not necessary - I do it anyway)
combine salmon (may substitute tuna use two small cans)
egg, miracle whip (or light mayo), chopped celery, chopped onion and a little of the cracker crumbs to bind it together. Form into 4 equal patties, fry in canola oil until golden brown.
