A very tasty, sweet and fresh vegetarian stew high in protein and fibre. My dad is celiac so he loves this recipe to get some yummy carbs. Instead of lentils try substituting chick peas. Ingredients

2 medium onion chopped
2 cups celery, diced
3 cloves garlic
1 tsp curry powder (optional)
1 tsp cumin
1 tsp ginger
1 tsp cinnamon
Large bunch of cilantro, chopped
2 cups chopped tomatoes
1 cup chicken broth
1/2 cup water
1 cup lentils rinsed and drained
1/2 cup raisins or craisins
1 large sweet potato cubed
Bunch of mint
Directions
1. Cook onion & celery until tender, stir in garlic and spices and cook for 1 minute.
2. Add tomatoes, chicken broth, water, cilantro, lentils, raisins and sweet potato. Cover & bring to a boil. Reduce heat to medium and cook for 10 minutes or until potatoes are cooked.
3. Stir in mint and serve.
