Ingredients

    2 packages of Frozen Chopped Spinach
    2 large eggs
    8 oz. Ricotta Cheese, part skim milk
    1 tbsp chopped onion
    Dash nutmeg
    1 tsp. salt
    pepper
    Munster cheese

Directions

Thaw and drain spinach, press as much water out of spinach as possible. In large mixing bowl,
mix spinach, slightly beaten eggs and ricotta cheese. Add nutmeg, salt and pepper. Spray a 10 inch glass pie or quiche dish with PAM and line the bottom and sides with Munster Cheese. Spread Spinach mixture on top of munster cheese. Add a layer of Munster cheese on top of the spinach (to serve as the crust). Bake of 45 min at 350 degrees. Let sit for 15 minutes before serving. Makes great lunch or dinner with a salad.
