Ingredients

    1 Cup Brown Rice
    1/2 Cup Lentils (any kind, but brown lentils will hold up best during the long cooking time for brown rice)
    3 1/2 Cup Water
    1 TBSP Olive Oil
    Salt and spices to taste (a cinnamon stick, cloves, etc would be good)

Directions

Add Oil to Pressure Cooker (or large pot with lid). Then add Rice and Lentils. Stir or Toss to coat evenly. Add spices here if wanted. Let cook for about 1 minute. Add water. If using a pressure cooker, put on lid and let come to pressure, turn to low and cook 45 minutes. If not, bring to a boil, cover and reduce heat to low and cook for 60 minutes (or according to Rice packaging). Top with Riata, carmelized onions, dahl, or just some soy sauce and Enjoy!
