Ingredients

    300g potato cubed
    2 cups egglants cubed or sliced
    1 cup onions diced
    400g canned crushed tomatoes
    4 tsp (20g) crushed garlic
    20g crushed ginger (quartered lengthwise)
    2 chilli peppers
    120 (1kg) raw shrimp/prawns deveined
    3 tbspn (20g) curry powder
    2 tbsn Vegetable Oil
    2 cups water

Directions

Heat oil and then fry curry powder until aromatic
saute onions, garlic and ginger
add tomatoes and simmer on low heat,
add chilli, potatoes and eggplant
cover with water and simmer until potatoes are cooked
add shrimps until pink and tender
serve on rice
