Introduction

Ingredients

2 english muffins, split in half
1 can of tuna packed in water and drained
2 tbsp of no-fat mayonnaise
1 tbsp of drained capers, diced (optional)
1 tsp of dill weed
1 tsp of freshly cracked pepper
1 tsp of paprika
2 slices of 2% (reduced fat) swiss
Directions
Preheat oven to 350 degrees.
Makes two servings.
After the tuna is drained, combine it with the mayonnaise. Dice the capers to taste and add to the tuna mixture along with the spices. Spread half of the tuna mixture on to two english muffin halves. On the remaining halves, place a single piece of the cheese.
Put both english muffin pieces on a cookie sheet or on tin foil and bake for 10 minutes.
Notes - Honestly, half of this mixture is -too- much for me on my muffin, so I usually go a bit lighter and save the leftovers. Also, I never measure seasonings. I go by taste, so quite probably sometimes I have a bit more paprika or a bit more dill weed than other times. Use what tastes good to you.
