Ingredients

    1 - 15.5 oz can Black Beans drained and rinsed
    1/4 cup bread crumbs
    1 egg
    1 cup sliced mushrooms (measured sliced) finely minced
    2 Tbsps pesto
    2 Tbsps minced garlic
    4 - halves of sun-dried tomatoes minced
    1/2 tsp Sea Salt
    1/4 tsp Cayenne Pepper

    Olive Oil (approx. 1/4 cup)

Directions

Mash black beans in a bowl.
Add remaining ingredients except olive oil and mix well.
Form into four patties.
NOTE: I strongly recommend rubbing about a teaspoon of olive oil into the palms of your hands before handling the mixtire since it is pretty sticky.

Pour enough olive oil into a large skillet to fully coat the bottom.
When the olive oil is hot (but not smoking) place patties in the skillet.
Cook for 5 - 7 minutes then flip.
When the patties are well browned on both sides and hot all the way through, remove from the skillet.
And now EAT!

I'm going to play with other seasoning options and will share them when I figure out what works!
